Holly the jumping dog...

Help with jumping needed - Holly is 18 months old and 65lb and we haven't managed to solve the jumping problem! She loves to bounce - here she is bouncing through long grass, she loves to bounce with rope, and she'll do it with or without help. All these are fine and cute BUT...
What is not so cute is jumping on people - space games, simple sit, off, on your mat - none of these have been effective. But we think this may be because we have 2 problems to solve and have been trying to do both with the same principles...
1) the 'greeting' - everyone needs kisses. Getting there - she's pretty good with me, but jumps on strangers so we are working on getting her to give a paw for a greeting (which puts her in a sit).
2) the 'ambush' - any time, any place, any where - any ideas? She gets a reaction because she surprises us (and thankfully it is pretty much confined to mum and dad), even if its pretty negative. How can we tackle this one?
